Turkey Soft Tacos

Taco Bell's Fresco Menu has been a great thing, but it's still very high in fat content, and I really want to avoid fast food, if possible. This is my idea for replacing one of my staple mexican dishes with a healthier alternative.

Servings: 8 pieces
Ingredients
- 1 pound Ground Turkey
- 1 Red Bell Pepper
- 1 package Taco Seasoning
- Water as directed on Taco Seasoning package
- 2 cups Fat Free Cheddar Cheese
- 2 cups Shredded Romain Lettuce
- 2 cups Diced Tomatoes
- Salsa
- 8 Whole Grain Tortillas
Directions
- Cook the beef in a large saute pan over medium-high heat until browned.
- Add the red pepper and continue to cook, stirring, until softened slightly.
- Add the taco seasoning and water, stir, and simmer for 10 minutes, until the pepper slices are soft.
- Place the tortillas on a f lat surface. Spoon 1/8 of the beef mixture on each of the tortillas.
- Layer on cheese, lettuce, tomatoes, and salsa, being careful not to overload the tortilla.
- Fold the bottom of each tortilla in about 1/3. Then fold the left and right sides over to cover the ingredients.
- Serve
