A few weeks back, I got a slight craving for an old favorite breakfast, grits and eggs! Over the weekend, I picked up a box of grits with the intention of fixing up my old favorite one morning. So far, I’ve been running behind nearly every day, but I wanted to get the old favorite in before the egg beaters expired. Tonight I felt I could use something just so tasty. I scrambled up the ham and eggs and nuked up the water for the grits. Once the grits were ready, I gave them a few squirts of the spray butter for extra flavor. I mixed it up really well and plopped the eggs on top. Overall, the breakfast was pretty high in carbs, but I felt it would be a good boost before my workout this evening. Still, it was a pretty amazing meal, but for the “breakfast” version, I’ll probably ditch the toast.
